Assistant General Manager

Big Axe Brewing in Nisswa, MN is looking for another exceptional leader to assist with operating a Brewpub or a brewery with restaurant and/or bar and restaurant.
This position requires a motivated, organized and driven individual who's willing to be very hands on.
We are a small, growing company with a lot of potential.

Though this is a manager position, this isn't a pedestal position where managers dictate only.

Responsibilities:
Reports significant issues, regulatory issues, losses, problems to ownership.
Advertise, interview, on board and train staff.
Ensure all paperwork completed for employees and all certifications are completed before hireEnsure food is ordered, received, stored and prepared in a manner that meets all food safety regulations for food service in the state of MN.
Must have or get food safety certification.
Works with Kitchen manager and staff to build training plans that include training all cooks on each meal, portions, equipment, opening, closing, cleaning and prep procedures in the kitchen.
Reviews these periodically with staff (ensuring portion sizes are adhered to) and waste is minimized.
Ensures processes for portion control are in place and adhered to.
Keeps an organized area for all storage, so all workers understand where things are.
Reviews locations of all items with each employee periodically.
Maintains and constantly improves a staff handbook for cooks and servers for training and reference.
Helps maintain all safety and policy related documentation, insuring it is correctly posted in accordance to MN State Law.
Ensures employees are given all updated handbooks and signs off on new policies.
Communicates frequently and effectively with staff on new processes, goals, products, etc.
Uses a combination of email, memos, text, phone, apps to streamline communication and ensure all staff are on the same page.
Must be responsive.
Creates and reviews schedules to ensure proper staff coverage and maintains the labor rates are in line with goalsWhen not at work, has trained assistant to ensure procedures are in place to ensure policies are followed and labor costs are managed effectively.
Acts as primary backup in case other staff are not able to work.
Mentors staff as necessaryMaintains food cost information at the plate and aggregate level are kept frequently and accuratelyMaintains/ensures food inventories weekly are kept frequently and accuratelyMaintains/ensures proper food stocks so all meals can be servedMaintains a positive attitude at all times and must be respectful and courteous to other employees.
Managers must enforce policies thoroughly and consistently.

Helps reduce cost by continually keeping eyes open for more cost effective supply (food/beer etc) optionsMust be well versed in spreadsheets especially Google Sheets and computer literate.
Ensures targets for COGS are met and reported.
Works with/delegates off flavor training and tasting panel coordination for beer.
Safeguards the property and ensures proper maintenance, organization and cleaning is completed.
Sets cleaning days when required.
Keeps close eye on waste and finds creative ways to reduce waste and increase optimal utilization of all types of resources (labor, food, water, utilities).
Helps execute and run the business per the instructions of Ownership and to their vision as described above (quality of food, beer, service, environment).
Ensures daily sales totals are counted and reconciled and all cash is accounted for and deposited accurately.
Monitors/audits as necessary to ensure people are following procedures.
Understands or willing to learn brewing process, tasks and timelines in order to fill in when necessary and also help understand production schedules for timely beer delivery.
Works with brewery staff and sales staff to ensure a smooth timely delivery of packaged beer to wholesale customers.
